    Yea, this cake takes only 1 minute in the microwave. So, enjoy!

    **Ingredients**

    * 3 tbsp almond flour
    * 1 tbsp unsalted butter
    * 1 tbsp cocoa powder
    * 1 egg
    * 1/2 tbsp sugar substitute (I use erythritol)
    * 1/4 tsp baking powder
    * 1/4 tsp instant espresso granules
    * tiny pinch kosher salt
    * drop or two of vanilla extract

    **Tools**

    * Mug (I used a ramekin)

    **Instructions**

    1. Melt the butter in the ramekin (I popped it into the microwave for 30 seconds)

    2. Combine all ingredients in the ramekin and blend well

    3. Microwave for 60 seconds

    4. Careful – it’ll be hot! But enjoy!!

    I love making this! Sometimes i’ll add a couple pieces of dark chocolate inside the cake or add a tablespoon of ready whip if my macros permit it

    I just made it. The flavor would definitely improve if you add other stuff like nuts or almond butter or unsweetened chocolate chips. Depending on what your macros allow.

    I made this today but without the espresso powder. I doubled it, buttered a bowl and cooked it in that, flipped it into a plate, cooled, and “iced” with homemade whipped cream made in less than a minute with my immersion blender. I decorated it with a couple strawberries sliced thinnly and it was our (my husband and my) keto alternative cake for my son’s birthday party. It was really good cold and iced.

    This is one of my favorites. I mix some heavy cream, rum, and sweetener (I use monkfruit), and pour the mixture on top with some shaved dark chocolate.

    You can also do it without the flour:

    2 tbsp cocoa powder
    1 tbsp erythritol (I use less)
    1/4 tsp baking soda
    1 egg
    1/2 tsp vanilla
    1 tbsp heavy creme

    Microwave for 40 seconds (my microwave may be above avg power tho so YMMV)

    I make this on a large scale without the cocoa and vanilla. I also bake it in the oven and it’s like a cornbread. I also use more salt.

    Did this with a half tsp of matcha powder and a tbsp of hazelnut flour instead of espresso and cocoa powder. Turned out nice!
