    *6 large vegetables for stuffing (i use peppers, tomatoes also work)*

    *1lb package of ground pork 80/20*

    *1 chopped onion or leek*

    *1 can chiles in adobo sauce*

    *cheese of your choose shredded or chunks*

    *fresh cilantro*




    *olive oil/butter (for saute)*




    Set oven to 375 F.

    Cut vegetable top or side open and take out insides.

    Saute with onions/leeks, dry herbs (Italian mix and paprika) , and can of Chile’s in adobo sauce for 2-3 minutes.

    Add meat and brown. Set aside.

    Lightly Oil, salt and pepper vegetables.

    Stuff each vegetable with meat mixture.

    Stuff wedge of cheese in middle- either shredded or wedge of whatever type of cheese you like best.

    Roast for about 25-35 minutes, or until skin of vegetable starts to wrinkle.

    Top with radish, cherry tomatoes, fresh cilantro, lime, and avocado garnish.
