    I have to be completely honest…that looks awful. Cold cheese, soggy bacon and a very dry bun. I’ve made this bread/muffin before and it can certainly be dry. I’ve found that grilling it using a bit of butter helps some. Try this biscuit recipe. It’s so good.     Muffin is 1 tbsp butter, half teaspoon of baking powder, 1 egg and about 2 tbsp coconut flour.
    Mix all ingredients in a small bowl, microwave for 90 secs.
