    This is a hybrid recipe created from looking at other recipes online.

    Keto Skillet Cookie

    ½ c. butter, softened

    2 eggs

    ¼ c. peanut butter

    ¼ c. pyure erythritol blend

    ¼ c. swerve powdered erythritol

    2 c. fine almond flour

    1 ½ tsp. baking powder

    1 tbsp. vanilla extract

    1 tsp. almond extract

    pinch of salt

    1 c. Lily’s semi-sweet baking chips


    NOTES: Can use any sweetener you prefer, can increase/decrease quantity of sweetener to preference, Use 100% peanut butter with no sugar or additives.

    Preheat oven to 350°. Prepare an 8″ cast iron skillet by placing a tbsp of butter into the pan and place in oven until butter is melted and starting to brown. In a large mixing bowl, add butter, eggs, extracts and sweetener. Mix until well blended and add peanut butter. Mix well and sift in almond flour, baking powder, salt. Mix well and add ¾ cup of the chocolate chips. Mix into batter and place cookie dough into hot skillet; smooth with a rubber spatula. Decorate top with remaining chocolate chips and place in oven for 20-25 min or until the edges are browned and the center is set. Remove from oven and let cool completely.

    Makes 16 servings or 8 generous servings.
