    Tested out a new stuffing method where you put the tip of the knife into the side of the breast and swipe left and right while twisting to create a hollow pocket with only one small hole on the side. I seasoned the breasts with salt, pepper, smoked paprika, and garlic powder, then I spooned in as much guacamole into each breast as I could (about a ¼ cup per breast using my smallest silicone spoon). Then I tightly wrapped in bacon (2 slices per breast) to seal the hole, which was marginally successful. I wanted the bacon to wrap tight around the breast so I pan seared first, then transferred into the oven, baking at 350F until an internal temp of 165F (about 30 mins). While the breasts were baking, I sautéed 3 cups of spinach with 3 cloves of garlic and a ¼ red onion, garnishing with roasted red peppers.

    Edit: I should note that the guacamole expands more than you’d think, and was molten lava straight out of the oven, so this should definitely rest before biting in. To expedite the cooling I sliced cross-wise to allow the steam to escape. However, after it dropped below volcanic temperatures, it was amazing.

    Looks great but the idea of hot/cooked avocado never sounds appealing to me. One day I’ll ha e to give it a try.
