    For those who don’t want to open the link…

    Ingredients:

    3.5 oz Butter melted (100 g / 1/2 cup)

    1 oz Coconut Oil (30 g / 2 Tbsp)

    7 Large Eggs (50g / 1.7 oz each)

    1 teaspoon baking powder (5g / 0.2 oz)

    7 oz Almond Flour (200 g / 2 Cups)

    1/2 teaspoon xanthan gum (2g)

    1/2 teaspoon Salt (2g)

    Instructions (in TL;DR)

    1) Whisk the eggs for 5 to 10 minutes to make it airy.

    2) Add melted butter and whisk again for a couple of minutes.

    3) Mix your almond flour, xanthan gum, salt and baking powder. Don’t over mix it because we want it to still be airy.

    4) Transfer to a baking dish and bake for 45 mins at 180°C

    5) Take it out and cool for 10 mins before serving

    The recipe I used yesterday was very similar and I made it for the first time too! Good fun – we had it toasted with bacon lettuce and tomato last night and it held up very well!!
