Baked Zucchini Pork Dumplings

Dusted off one of my old recipes and it was just as amazing as I remembered:
* 300 g zucchini
* 250 g ground pork
* 35 g cabbage
* 25 g scallion
* 1/3 cup cilantro
* 2 tbsp Soy sauce
* 1 Egg
* 1 tbsp ginger
* 2 cloves of garlic
Slice zucchini into strips with a mandolin slicer, salt and pepper, then reserve. Finely chop all the other veggies then mix everything but the zucchini in a mixing bowl until just combined. Lay down zucchini strips (In an “X” shape, 1X1 or 2X2 depending on zucchini width). Place spoonfuls of stuffing in the center of the “X” using a sorbet scoop to make consistent portions. Fold over the flaps, and flip onto a wire rack with the flaps on bottom. Then place wire rack on top of a sheet pan to catch moisture. Bake at 400F for 20 minutes or so until they firm up, then optionally throw under the broiler for two minutes to brown the tops some more.
Dumplings were great as is, but to make the sauce, add at least a tsp of ginger, cilantro, scallions, and garlic to a quarter cup of soy, 2 tbsp of seasoned rice vinegar, and a few drops of sesame oil. I’d watch out for the rice vinegar though, if you’re trying to limit sugar/carbs.
What do they look like cooked?
They look unfinished: roll them in egg and water, dredge in crushed pork rinds, fry in coconut oil or ghee.
I may have to try this. I make potstickers but since I’m keto, I’ll replace the skins with cabbage leaves.
