    Bison Ribeye: I rubbed it with a pinch of salt, dried garlic, dried onion, black pepper, red pepper, paprika, and dill.
    I seared it in butter in a cast iron skillet on high for 5min each side.

    Hollandaise: 4 egg yolks, 1 tbs lemon juice, 3/4 a stick of melted hot butter, paprika. All of these went into a blender for approximately a minute. I added black pepper and fresh herbs once I was happy with the consistency.

    Spinach:
    Sautéed in butter, with a minced clove of fresh garlic. About a minute on the stove in a shallow pan.

    Having a bit of a crisis.

    My first thought was that you ruined that steak by putting anything other than salt on it.

    My second thought was that hollandaise sauce is the most amazing thing on the face of the planet and I should be ashamed of myself for even the passing notion that it could ruin anything.

    Now the steak purist side of me is in conflict with the holandiase loving side of me.

    I think the only way to settle this is by trying it, but then I fear I’ll never be able to eat steak without hollandaise sauce.

    Bison ribeyes are amazing. Not an easy find around my neck of the woods. Whole Foods occasionally has them but at 30/lb hard to rationalize with beef ribeyes at 12/lb

    Oh God this brings back memories, our neighbor decided to try raising buffalo, not realizing that they are not just big cows, they give like zero fucks about electric fences or the regular wooden variety that we have around here…. so he gets a female with the thought he would inseminate her like he did all the time for his cattle…. nope, she was having none of that and broke through the fence and took off, it took 12 men myself included to corral this thing and even then we couldn’t get her loaded up. Farmer finally decided to hell with it and put her down. He gave us all a ton of buffalo…. good times.
