    I’m still ridiculously full, which is concerning because this was supposed to be my OMAD and was way less calories than expected, oops!

    If you look through my post history, you’ll see I made fathead chips into nachos. Then we thought hey, why not just make big bois and turn em into burger buns? And here we are!

    For the buns:

    1 cup shredded mozza

    1/2 of 3/4 cup almond flour (I just kind of eyeballed it)

    1 egg

    Instructions: preheat oven to 350F. Mix the cheese, almond flour, and any seasonings (we used garlic powder, salt, and paprika) in a bowl and microwave for 1 minute, stirring halfway though. Stir again when finished. Add the egg and knead into the dough. 1 egg is way too much for the amount of dough, so it only ended up being ~1/2 an egg worth in the recipe! Split dough ball into 4 equal pieces, and press out on parchment until round. You’ll want them a bit thin, but not too much! Pop in the oven for 10-12 minutes, flipping half way through. Set aside when done, crank the oven up to 425F, and start on your burgers!

    Ingredients for burgers:

    1 lb ground beef
    1 egg
    1/4 cup parmesan
    Seasonings as desired

    Instructions: add to bowl and mix, basically. I’m not about to tell anybody how to season their burgers, but we find the egg and parm make a perfect binder, you won’t even miss bread crumbs! 1 lb of beef yielded 7 patties for us, so we’re probably going to have bacon cheeseburger omelettes for brunch tomorrow! Bake burgers for 25 mins (or grill if you live more south than we do and have the option to BBQ right now).

    Nutrition info (1 patty and 2 buns, totally naked, no good stuff cause y’all gonna make it how you want!): 458 calories, 3g carbs, 1g fibre, 2g net carbs, 32g fat, 41g protein.

    For toppings, we added smoked gouda cheese and broiled for 3 mins, cholula/mayo mix, homemade almond flour breaded fried jalapenos (good use for the other half of that egg you never used in the buns!), Dijon mustard, pickles, red onions, and lettuce. It was super fabulous!
