    Recipe adapted from [Flavcity](


    · 3 Tbsp avocado oil

    · 1 large head cauliflower

    · ½ yellow onion, diced

    · 2 cups of broccoli florets, cut in small bite size pieces

    · ½ medium zucchini, cut in small bite size pieces

    · ¾ cup snow peas, sliced thin on diagonal

    · 3 cloves garlic, minced

    · 1 teaspoon fresh ginger peeled & finely grated (or ¼ tsp ground ginger)

    · 3 eggs, beaten

    · 2 Tbsp tamari (or coconut aminos)

    · 1 tsp chili paste

    · 1 Tbsp toasted sesame oil

    · ¼ cup green onions, finely sliced

    · Salt and pepper



    1. Use a food processor or the large setting on a box grater to grate the cauliflower. Set aside.
    2. Preheat a large non-stick pan or wok over medium-high heat for 1 minute along with the avocado oil. Add the onions, broccoli, zucchini, ¼ teaspoon of salt, and a couple cracks of pepper. Cook for 6 minutes, stirring a few times.
    3. Add the snow peas, garlic, ginger, and cook another 2-3 minutes, or until the broccoli has softened a bit.
    4. Whisk the eggs in a bowl, make a well in the middle of the pan with the veggies, and add the eggs. Mix the eggs until they look like a soft scramble and immediately add all the cauliflower rice and mix very well. Add the tamari, chili paste, toasted sesame oil, and mix well. Cook for 5 minutes, stirring very often. Check for seasoning, you may need more of the sauces. Turn the heat off the pan, mix well, and transfer the cauliflower rice to a large bowl. Top each serving with green onions.





    · 1- ¾ lb chicken thighs, trimmed and cut into small bite size pieces

    · Salt and pepper

    · 1-½ Tbsp butter



    1. Melt butter in large skillet on medium-high heat.
    2. Add chicken pieces, salt, and pepper. Stir frequently until chicken is cooked through, about 5 minutes.
    3. Top cauliflower fried rice with chicken.





    · ¾ cup avocado oil mayonnaise (my favorite is Sir Kensington’s), Note: if you use regular canola oil mayo, you might want to add a couple drops of liquid stevia. I find avocado oil mayo has enough natural sweetness for this sauce.

    · 2 tsp tomato paste

    · ½ Tbsp butter, melted

    · ½ tsp garlic powder

    · ¼ tsp paprika

    · 2 dashes cayenne pepper

    · 2 Tbsp cold water



    1. Whisk all ingredients together until sauce is smooth
    2. Refrigerate for at least 6 hours before serving
    3. Top each serving of cauliflower fried rice with about 2 Tbsp of yum yum sauce



    Per 1/6 of cauliflower fried rice and chicken

    Fiber: 0g

    Pre-keto I never EVER would have thought ‘cauliflower rice’ was any good. So happy to be proved wrong – in fact ordinary rice (made from rice..) now looks ‘heavy’ and indigestible compared to this version (and I used to love rice). I hardly ate cooked cauliflower pre-keto either (always liked it raw with cheese dip though).

    This recipe looks great and definitely saving it.
