    For the chicken, I use the this marinade:

    1 Tbsp peanut oil or a neutral oil

    2 garlic cloves, crushed

    1 tsp oregano

    1 Tbsp cumin

    1 tsp cayenne

    1 tsp paprika

    1 lime, juiced

    1 Tbsp olive oil

    1 tsp kosher salt

    1 tsp freshly ground pepper

    4 butterflied and pounded chicken breasts

    For the tortillas:(best low carb tortillas you will ever have)

    1 cup almond flour

    3 tablespoons coconut flour

    2 teaspoons xanthan gum

    1 teaspoon baking powder

    1/4 teaspoon kosher salt

    2 teaspoons apple cider vinegar

    1 egg lightly beaten

    3 teaspoons water

    I like to add sliced bell peppers to my quesadillas but that’s optional.

    First, mix together all of the ingredients for the marinade. Put in a plastic bag with the the butterflied and pounded chicken. Let marinate for at least an hour.

    For the tortillas, mix together the almond flour, coconut flour, Xanthan gum, baking powder, and salt. Until completely combined. Next add the Apple cider vinegar and mix completely. Then add the egg and water and combine until a somewhat sticky dough forms. Knead in plastic wrap for 4 minutes and then let rest for ten. Cut the dough into 8 similar sized balls and flatten out until about 5 inches long(forgot to add here, flatten out under the plastic wrap or else it will stick) Cook for about 4 or five second on one side on medium heat and then 45-60 seconds on the other side. Let cool.

    For the chicken, cook on medium heat for about 4 minutes per side, or until the internal temp is 165F.

    Cut the chicken into smaller pieces,

    Take two of the tortillas and add the cheese, chicken, and bell peppers and then add half a tablespoon of butter and cook on medium heat until the cheese is melted and both side are a nice golden brown, about 3 minutes or so per side. Cut into halves or quarters or how’re you like it, and enjoy!

    So is there any benefit to making your own tortillas instead of buying low carb tortillas? The ones I buy are 4g net carbs each and are pretty tasy.

    That stuff will wreck good health.
    Ghee, coconut oil, macadamian (?) nut oil are better alternatives

    Unlike the person who asked about replacing the coconut flour, any idea if it is possible to replace the almond flour? My wife is allergic to nuts unfortunately, and this looks like something we’d love!
