I’m guessing it’s the marinade or the photo but at first glance it looked pink, I was like “Oh noes!” Haha

I love my chicken super rare too, everyone I know hates it.
This is an amazingly simple yet healthy and delicious dish that my wife whipped up one day and has since become a staple in our house.
The base is just a half head of cabbage shredded – adjust more or less depending on how many servings your making.
Toss the cabbage in salt, pepper, lemon juice and olive oil – I use my good olive for extra flavor and find that 1 lemon per half head is a good amount.
Add in your toppings just like any salad bar.
We love using grilled chicken thighs but any protein would work. This time I also added some red onion, tomatoes and avocado.
It’s also great with some Parmesan or cotija cheese for a little kick.
It’s a simple but versatile recipe that is great at home for dinner or as a picnic lunch and can easily be changed so it doesn’t get boring.
Are those tomatoes? I thought those are to be avoided.
