    From “the one-pot ketogenic diet cook book” by Liz Williams.


    4cups Slow cooker salsa chicken (also a recipe from this book, basically I just put some boneless skinless chicken breasts in my slow cooker with two cups of salsa, 2 tsp ground cumin, 2 tbsp garlic powder, juice of 2 limes, salt and black pepper to taste, then cook on low 6-8 hours)

    *EDIT* shred the chicken with a fork after slow-cooking 🙂

    10 slices of bacon, crumbled

    2 cups thawed frozen spinach, drained

    1 cup ranch dressing (got mine refrigerated from Whole Foods, but just look for brand w/ lowest carbs

    2 minced garlic cloves

    1/4 cup sliced scallions, white and green parts

    1 cup shredded cheddar, divided

    1 cup shredded mozzarella, divided

    **Cooking instructions:**

    Preheat oven to 375F and grease 9×13 baking dish with butter

    Combine ingredients in a large bowl, leaving 1/2 cup of the shredded cheddar and 1/2 cup of shredded mozzarella to sprinkle on top (I definitely used more)

    Pour mixture evenly into baking dish and sprinkle remaining cheese

    Bake for 15-20 min or until cheese is bubbly.
