    * 1 1/2 lbs ground chicken
    * 2 large eggs
    * 1/3 cup mayonnaise
    * 1/3 cup coconut flour
    * 1 cup shredded mozzarella cheese
    * 1/3 cups shredded cheddar cheese
    * 1 1/2 Tbsp chopped fresh dill
    * 1/2 tsp salt to taste
    * 1/8 tsp black pepper
    * 2 Tbsp olive oil to saute (or any high heat cooking oil)

    Combine ingredients.

    Heat frying pan to medium heat.

    Cook until chicken is no longer
    pink, flipping every 3 – 4 minutes.

    Serve as an appetizer or side with desired dipping sauce.

    You got a nice crust on it for something that doesn’t have porkrind/ cheese on the outside. Nice simple recipe thanks! I made something similar with this idea in mind but ground turkey which I hate was on sale so I doctored it up greek style with lemon juice, oregano, sumac which is a sorta tangy spice, and crumbled feta. Fried them in a pan and ate it with Tzaziki sauce and cucumber and lettuce in a low carb wrap. It’s a keeper. Fritters forever!
