    ### Ingredients

    * 1-2 red bell peppers or mixed colors, cut into strips
    * 1 yellow onion cut into strips
    * 1/2 lb steak flank or sirloin, cut into strips
    * 1/2 lb chicken thigh cut into strips
    * 1 tsp each: cumin garlic powder, chili powder, paprika
    * salt and pepper to taste
    * cooking oil I like avocado oil

    #### For serving:

    * 1 batch Traditional Guacamole
    * 1 batch Pico de Gallo
    * cilantro green onions, cheese

    ### Instructions

    1. In a pan (preferably cast iron) over medium heat, add 1 tbsp cooking oil. Toss in onions and allow to cook for 2-3 minutes until starting to soften. Add bell peppers to pan and cook another two minutes. Add in chicken and the spices.
    2. Cook for 4-5 minutes then add in the steak.
    3. Add salt and pepper, to taste.
    4. Cook until chicken and steak are no longer pink and all the way cooked through (time will vary depending on thickness of your strips).

  5. DAE remember when ‘fajitas’ meant skirt steak?

    Round about 1980 or so my favorite Mexican restaurant in San Antonio (can’t remember the name, nor even the precise location) started serving “tacos al carbon.” Flour tortillas with skirt steak and all that. I asked the proprietor what the meat was. He said “fajita.” It wasn’t long after that the fajitas craze swept the nation. I remember the first time I saw/heard “chicken fajitas” I laughed and said “WTF?”

    I pretty much make this minus the pico and using green pepps to save a couple carbs. Squeeze a hint of lime on top and we good to go, yum.
