    **Little lemon Bundt cakes :)**

    *Cake ingredients:*

    6oz cream cheese (softened)

    1/2 cup butter (softened)

    3/4 cups granulated erythritol monkfruit sweetener

    4 eggs

    1/2 tsps zest

    2 tbsps lemon juice

    2 cups almond flour

    1 1/2 tsp baking powder

    1/2 tsp of salt

    *Icing ingredients:*

    5 tbsps heavy cream

    3/4 cups swerve powdered erythritol

    1 tbsp lemon juice

    1/2tsp lemon zest

    1. Preheat the oven to 350F.

    2. With a mixer combine the butter, cream cheese and granulated sweetener.

    3. Add eggs one at a time, scraping the bowl in between.

    4. Mix in lemon juice and zest.

    5. In a separate bowl, sift and combine the almond flour, baking powder, and salt.

    6. Gradually incorporate it into the wet ingredients.

    7. Fill mini Bundt cake molds (I used a silicone mold so it was nonstick)

    8. Bake approx 25-30 min (until tops, or until golden brown)

    Combine icing ingredients when the cakes have cooled and then spread over the top of each cake and top with a berry or mix green food coloring and shredded coconut into the icing and top with a gummy or chocolate egg)

    **When you make 24, each (just cake and icing) is approx 134 calories, 13g fat, 1.5g net carbs, 3.6g protein.**
