    **Stuffed Bell Peppers** 

    *Ingredients:*

    2 Bell Peppers (I used orange)

    1lbs ground beef

    1 1/2 tbsp of pork rind crumbs (optional)

    1 cup of shredded cheese (1/4 cup per half pepper)

    2 cloves of garlic

    1 tbsp of paprika

    2 tsps of olive oil

    *Instructions:*

    1. Preheat the oven to 400F.

    2. Wash and dry the peppers, cut them in half (stem on), and scoop out the core/ seeds and place them on a lined baking sheet.

    3. Peel two cloves of garlic and place them in a garlic press.

    4. Over medium heat, add two tsps of olive oil to a pan. Then add the ground beef. Break it apart and stir the mixture as it browns. Add the paprika, 1 tbsp of the pork rind crumbs and salt and pepper to taste. Once the meat is cooked through, turn off the stove. 

    5. Fill each pepper half with 1/4 lb of the beef mixture, top with 1/4 cup of cheese and then sprinkle with the remaining pork rind crumbs.

    6. Bake covered for 10 minutes. Then remove the cover and bake an additional 5 minutes.

    **Makes 4 servings. Per serving: 448 calories, 30g fat, 4g net carb, 37g protein**

    **Purple Kale salad Recipe**

    *Ingredients:*

    1 Small bunch of purple kale

    1 Tsp olive oil

    1 Tbsp of white vinegar

    1/4 cup of water

    5 pecans (chopped)

    2 Tbsps greek yogurt

    1. Rinse the kale and remove the stems. Tear the leaves into bite-sized pieces. 

    2. In a sauce pan, heat 1 tsp of olive oil on medium. Add the kale and stir for about 1 minute. Then add the 1/4 cup of water and cover. 

    3. Let it cook on medium- low heat until the leaves are wilted, stir occassionally.

    4. When the leaves have wilted, stir in the white vinegar, greek yogurt and pecans. 

    Enjoy!

    **Makes 4 servings, each at: 56 calories, 4g fat, 3g net carb, 2g protein**

    **Avocado nutrition info (for 1/2):161 cals, 14.5g fat, 2g carb, 2g protein**

    **WHOLE MEAL: 665 calories, 48.5g fat, 9g carbs, 41g protein**
