Enchiladas with cauliflower rice

I made this dish because I was craving Mexican food.
Here’s what I used.
-Mission lo carb protein tortillas
-1 pound of grass fed beef
-taco seasoning 2 table spoons or as you like
– garlic 2 cloves
-olives for topping
-cheese of choice (I used mozzarella on top and cheddar Inside)
I first started off by using some avocado oil in a pan with the meat and garlic. I let those two sauté for 3 minutes or so before adding the taco seasoning. I let the mixture cook for 10 mins or until golden brown. I then opened the enchilada sauce and started to dip the tortillas in the sauce on one side. I added a portion of meat to the tortilla and a piece of cheese, then placed the stuffed tortilla on a baking sheet with a lite coating of sauce at the bottom. I did this for all the enchiladas until I made 6. I poured the remaining sauce on top with some cheese and baked at 350 for 10 then broiled for 6 mins or until golden brown.
