    (I didn’t use a recipe for this, just winged the ingredients and the cooking time Is roughly based on what I’ve made in the past)

    Recipe:

    8 eggs
    1/4 cup heavy cream

    4 oz mushrooms (sliced, I used baby Bellas)
    4 oz diced ham
    6 pieces bacon, chopped
    2 cups spinach, de-stemmed, roughly chopped
    1/2 medium onion, finely chopped
    6 cloves garlic, minced
    1 cup shredded mozzarella
    2 oz goat cheese of your choose (I used garlic +herb)

    Mix eggs and cream in small mixing bowl, set aside

    Preheat oven to 400F, heat 10-12” cast iron skillet to medium on stovetop

    Add bacon to skillet, cook until crispy. Use slotted spoon to transfer to large mixing bowl. Leave fat in skillet

    Add onion and garlic to hot bacon fat. Cook until caramelization begins. Add ham. Cook for a minute, add mushrooms and spinach. Salt liberally, cook until spinach is cooked down and mushroom get some color. Scoop into large bowl with the bacon. Allow a few minutes for cooling.

    Pour egg mixture into bowl with cooked ingredients, and add mozzarella. Combine well.

    Pour egg/filling mixture into still hot skillet. Cook stovetop until a crust forms on the edges. DO NOT STIR OR SHAKE THE PAN

    Crumble and sprinkle goat cheese over the top.

    Put skillet in oven for 10-15 minutes, until it isn’t jiggly anymore

    Let sit for 20 or so minutes before serving.
