    SERVES 3

    2 cups broccoli (including the stem which has more calcium, fiber, iron, and vitamin E) 200ml of coconut milk, 3tbsp salted butter, 250g courgette, 1 small avocado, 2 cups spinach, 2 cups chicken broth, 1/4 onion, 3 cups of chopped chicken, 6 tbsp pumpkin seeds for garnishing (2 tbsp per serving)

    Macros per serving:
    686kcal, 11g net carbs, 38g protein, 52g fat

    – Chop and steam the courgette and broccoli.
    – Put it in a blender with the avocado, coconut milk, chicken broth, and salt and pepper to taste. If it’s too thick you may need to add a cup of water.
    – In a pot soften the diced onion in the butter and wilt the spinach.
    – Add the contents of the blender and let it cook for up to 5 minutes.
    – Fold in the chicken (shredded or chopped) and plate up with some pumpkin seeds for texture!

    We make our own chicken broth by chucking a whole chicken, some stubs of ginger, garlic, onion, and goji berries into a rice cooker for about 4 hours. We keep a lot of that chicken fat to enrich the flavour of the soup. Hope you enjoy!!

    Kudos to you for creating something excellent and posting the ingredients in the macros and this should be a lesson to a lot of people that you don’t have to buy any store bought Frankenstein pretend food garbage.
    So much of what we see on here are people trying to re-create Twinkies and bread.

    Did you peel the zucchini? I have a vitamix so I’m not too worried… But maybe it comes out smoother without the skin? Just curious 🙂

    Edit: Any thoughts on roasting the Broc and onions?
