    Roast chicken rub:

    2tbs olive oil

    1tsp salt

    1tsp pepper

    2tsp paprika

    1/2tsp chili powder

    1/2tsp onion powder

    1/2tsp garlic powder

    1/2 tsp poultry seasoning

    Mix it all together and slather all over a whole chicken (5-6lb)

    Preheat oven to 450 then put chicken in and drop to 375(this gets a nice crisp skin)

    Cook 20 min per lb or until 165 degrees.

    Once chicken is done, let rest. Pour pan drippings into a sauce pan and add 1/2 cup chicken stock. Reduce for about 15 min. Add xanthan gum a little at a time until thick. You shouldn’t need to add any additional seasonings!!

    Loaded broccoli:

    Steam broccoli til al dente. Put in an oven safe dish and cover with freshly grated cheddar and real bacon bits. Broil til bubbly. Add sour cream, butter, and a sprinkle of chives!
