    **Instant Pot Broccoli + Spinach Egg Bites**

    4 large eggs

    1/2 c cottage cheese

    1/2 c shredded cheddar

    1/4 c chopped broccoli

    1/4 c spinach

    salt + pepper

    Combine all ingredients in a medium bowl and whisk well. Spray silicone molds with nonstick spray. Pour into silicone molds. Steam for 10 minutes, then natural release for 10 minutes.

    Each egg bites is 8 grams of fat, 1 gram carbohydrate, 9 grams of protein. These should keep for four days in the fridge. They’re similar to the Sous Vide Egg Bites at Starbucks but for a fraction of the price. I make these every week for easy breakfasts and they’re divine. 🙂 You can try all sorts of combinations, spinach feta and roasted red pepper, bacon and cheese, even do an Asian twist with Scallions and a dash of soy sauce.

    I make these for the week on Sunday. I’ve found the reheating them in the toaster oven gives them a nice finished texture similar to when they get put in the oven at Starbucks.
