1 pound sausage or ground pork
8oz Portuguese sausage, chopped
1/2 pound bacon, chopped
10oz frozen spinach
1/4 cup green onions
1/4 cup white onions
3 cloves garlic
1/2 cup sharp cheddar
1/2 cup Monterey Jack
About 1/2 cup heavy cream
Microwave spinach according to package directions. Dump onto tea towel and squeeze out all the water. Set aside.
Put bacon in sauce pan, cook over medium heat for about 3 minutes. Add both onions, garlic, and mushrooms. Cook for 3 minutes. Add spinach and Portuguese sausage. Cook another 2-3 minutes. Remove to mixing bowl.
Brown sausage and drain on paper towels.
Crack eggs into mixing bowl and scramble thoroughly with cream. Season to taste.
Begin to layer ingredients: sausage, bacon/spinach mixture, cheeses. Then pour egg mixture over the top. Bang on counter to ensure eggs reach the body of the pan.
Bake at 350 for 25 mins in 13×9 pan
Optional: Top with primal palate garden ranch dip and diced Roma tomatoes
