    – 2.5 pounds pork loin chops
    – 2 tsp minced garlic
    – 1 tsp dried oregano
    – 2 tbsp olive oil (NOT extra virgin)
    – salt
    – black pepper

    Keto “Habichuelas y Arroz”

    – 1 can Eden Farms Black Soy Beans
    – 2 strips thick-cut bacon, crispy, minced
    – 4 tbsp chopped pimentos
    – 1 tbsp minced garlic
    – 1 tbsp dried oregano
    – 1 packet Sazón Goya Culantro y Achiote Seasoning
    – 6 large Spanish Olives, chopped
    – 3 tbsp olive oil for frying, plus bacon grease from bacon
    – Kosher salt and black pepper, to taste


    About 2.5 pounds pork loin chops rubbed with generous olive oil, minced garlic, kosher salt, black pepper and oregano, baked in a casserole dish for 30 min @ 350f.

    Heat three tbsp olive oil (NOT EVOO) in a deep stockpot or caldero. Sauté two strips bacon until crispy, remove and chop, and sauté chopped Spanish olives/pimentos in the bacon grease. Add minced garlic and oregano to taste. Add chopped bacon. Add kosher salt and black pepper to taste. Stir in one can black soybeans.Sauté all over medium heat for about 10 min, stirring occasionally.

    In the meantime, cook three bags frozen diced cauliflower in the microwave until throughly cooked (sulfur smell is completely gone). Dump all that into the pot with your sauté base and add one packet Sazón Goya Cilantro Con Achiote seasoning, mixing everything together throughly. Put burner on medium-low heat, cover and let “steam” for about 20-25 minutes.

    A nice, burnt “pegao” crust will form on the bottom if you nail the temp just right.

    Makes 8 servings.
