I adapted this from a chocolate chip cookie recipe. One batch makes 16 servings.
2 and 1/4 C almond flour (212 g)
1 t baking soda
1 t salt
1/3 C cocoa powder (31 g)
1 stick butter (112 g)
3/8 C golden lakanto (66 g)
3/8 C erythritol (66 g)
1 t vanilla extract
2 large eggs
Lakanto chocolate (284 g)
Walnuts (134 g), optional
I used the chocolate bars and chopped them using a Vitamix, because Lakanto’s chocolate chips are made with tapioca “fiber” which is not keto friendly.
Combine all ingredients in a large bowl, mix, and bake for 15 minutes at 350 F in a 9″ by 13″ rectangular glass pan.
Macros (calculated without walnuts) for a 53 g serving according to Cronometer: 5.3 g protein, 18.3 g fat, 4.1 g net carbs.
