I adapted is from this recipe. https://www.cocoandash.com/pumpkin-spice-roasted-pecans/

    Ingredients:

    1 pound pecan halves.

    1 egg white

    2 teaspoons maple extract

    2 teaspoons water

    2 teaspoons ground cinnamon

1 cup of sugar replacement (I recommend monk fruit sweetener)

    1/2 teaspoon salt

    Directions:

    Preheat oven to 250°F.

Mix egg white, maple extract, and water together until frothy.

In a large bowl combine the egg white mixture and pecan halves until fully coated with egg white mixture. I usually use my hands. If you don’t like the feel of it use a spatula. I can’t promise they’d all get covered adequately though.

In a small bowl combine sweetener, cinnamon, and salt. Then coat the pecans. Again, I suggest you use your hands just to make sure they’re all coated.

Line a rimmed baking sheet with parchment paper and add pecans in a single layer.

Transfer to oven and bake for 1 hour. Halfway through flip as many of them as you can with a spatula and continue to bake for the rest of the time.

After done baking let cool and enjoy. I warn you. They are addictive and you can’t just have one. Either that or I have very little willpower.

I love these! They are almost as satisfying as real pecan rolls.

That seems like a lot of “sugar”. How do you think the recipe would fare if I halved it?
