    Hey guys! Here’s my favorite Christmas cookie recipe for keto peanut butter blossoms. It helps having kiss molds to get the authentic feel. I got mine on Amazon. But you can totally just put some chocolate chips in the middle instead!



    * 2/3 cup allulose
    * 1 Cup Peanut Butter
    * 1/2 Cup Butter
    * 2 Eggs, Room temperature
    * 2 cups Almond Flour
    * 1/4 tsp Xanthan Gum
    * 1/4 tsp Cream of Tartar
    * 1 ½ tsp Baking Soda
    * 1/2 tsp Salt


    * 2 x 3oz Lily’s Chocolate Bars
    * 2 T coconut oil

    **Make the kisses:**

    1. Melt chocolate and coconut oil in a glass measuring cup in the microwave in 15 second bursts until almost all of the way melted.
    2. Stir with a spatula until all the way melted, then pour into kiss molds.

    **Make the cookies:**

    1. Cream together butter, peanut butter, and allulose in the bowl of a stand mixer until light and fluffy. Mix in the eggs one at a time until combined.

    2. In a separate bowl, sift together almond flour, xanthan gum, cream of tartar, baking soda and salt. Mix into the butter mixture until combined.

    3. Cover dough with plastic wrap and refrigerate for one hour or up to 48 hours.

    4. Pre-heat oven to 350°F and line a baking sheet with parchment paper or silicon baking mat. Scoop dough onto prepared baking sheets (I used the purple disher, #40, which is 0.75 oz) and bake for 10-12 minutes.

    5. Let cookies cool for 5 minutes on baking sheets, then move to cooling racks and immediately press one keto kiss into the center. Put cooling racks in refrigerator and lets cookies cool the rest of the way.

    I had to google what Allulose is – it’s a sweetener. Is there a equivalent to Swerve (granular or confectioners), measurement-wise?

    Is it salted or unsalted butter and half cup of melted butter or room temp butter sticks? How many sticks then is 1/2 cups
