Low carb fajita tortilla (I used Mission Carb Balance, 6g net carbs)
2 tbsp Pizza sauce
1/4 cup Shredded Mozzarella
2 oz Pepperonis
2 oz Frozen Peppers
First, I nuked the frozen peppers for about a minute, then dabbed the excess water with a paper towel.
Put down aluminum foil on a baking sheet. Spread a little olive oil. This keeps the tortilla from sticking and gives it a nice little crisp.
Then, just add the sauce, cheese, and toppings. Baked at a real low temp (325º F) for like 15 minutes.
