    Recipe:

    I made a big batch that can serve 4-6 people.

    Ingredients:

    3 cups of cauliflower rice

    1 cups of vegetable mix of your choice

    150g of cooked shrimp

    2 eggs

    1 tbsp garlic ,1 tbsp ginger

    salt, pepper, red chili powder, curry powder – to taste

    3 tbsp olive oil

    2 tbsp sesame oil

    1 tbsp lemon juice

    2 tbsp soy sauce

    1 tbsp fish sauce

    3 tbsp chili garlic sauce

    1. Start with sauteing garlic and ginger in the olive oil, once it’s simmering add in your cauliflower rice and mixed vegetables and mix so that they’re coated in the oil
    2. I added salt and black pepper and kept mixing, trying to get rid of any excess water but not overcooking because i wanted the rice soft but the veggies just a lil crunchy
    3. I mostly kept the height on medium/high and mixed a lot. I would say it took about 10-15 minutes to get to the right place but I wasn’t timing. Once it was getting close to being ready, I moved the rice to the corner of the pan and then cracked two eggs in the center and put the heat on high, I mixed the eggs and tried to create a big of a scramble, then mixed it with the rice.
    4. Next I added soy sauce, fish sauce and the chili garlic sauce and then the shrimp. I put black pepper, red chili powder, curry powder and some salt on the shrimp before mixing it with the rice.
    5. Then I took it off the heat and stirred in sesame oil and lemon juice and voila!
