    creamy chicken soup

    my first reddit post woo! i’m on day 6 of keto and my keto flu turned into a full on cold so i’m home sick and made some soup (bone broth wasn’t cutting it for me lol). i saw a similar recipe a couple years ago but i can’t remember where so i adapted it to what i could remember and what i have. this is what i had on hand today. it kinda~ tastes like one of those white sauce pizzas but in soup form.

    – 2 TBSP oil (i used bacon grease since i was cooking bacon)
    – 1/2 yellow onion diced (about 1 cup)
    – 2-3 stalks celery chopped (about 1.5 cups)
    – 4 cups baby spinach
    – 1 cup grape tomatoes, halved
    – 1 TBSP (ish) of minced garlic
    – 1 12.5oz can of chicken breast, drained (rotisserie chicken is better but i used what i had)
    – 8 slices of bacon (cut into bits, fried. and drained.)
    – 2 knorr chicken bouillon cubes
    – about 40oz water (sorry i eyeballed it)
    – 1/2 cup heavy cream
    – 4oz (usually 1/2 a block) cream cheese
    – salt, pepper, and dill (i used dried) to taste

    1. heat oil over medium heat and add onion and celery, cook until they start to be fragrant.
    2. add garlic and continue to cook until they just start to become translucent.
    3. add 1 cup of water and bouillon cubes and stir to dissolve, then add the rest of the water, the chicken, bacon bits, heavy cream, cream cheese, and seasonings if you haven’t been seasoning as you go.
    4. simmer for 30min stirring often to help the soup thicken up a bit (it won’t get thick like chowder)
    5. add grape tomatoes and spinach and simmer for about 5-10 min depending on how soft you like your veggies.

    note: i let mine sit for 30 min in my instant pot on “keep warm” before i ate it just cuz i wasn’t feeling up for eating yet but knew i would be eventually.

    oh right! macros and whatnot for the whole pot (divide accordingly lol (this is according to my app):

    calories: 1896
    net carbs: 25.9
    protein: 82.1
    fat: 160.7

    of course cutting out the tomatoes would cut some of those carbs but i love the pop of flavor they give. also even if you only split this soup 4 ways it would still be less than 6.5g of carbs. some might say this is too much bacon… it might be but i like bacon ¯_(ツ)_/¯
