This morning while preparing the pancake mix, I decided I will try something new. Instead of sweet pancakes I made a breakfast sandwich LOL.
Here is the recipe:
Pancakes: 8 serves
150gr almond meal
25gr coconut oil
40gr almond milk
1 teaspoon of baking powder
1 pinch of salt
Optional for sweet pancakes:
2-3 tablespoons of powdered sweetener
1/2 teaspoon of vanilla extract
Whisk all ingredients together in a bowl until smooth.
Preheat an oiled pan on the stove over medium-low to medium heat. Drop the batter onto the hot pan and form into circles. Cover and cook about minutes, until bubbles start to form. Flip and cook another minutes until browned on the other side.
3 Net carbs for a pancake.
For the sandwich I added cheddar cheese and high protein Turkey ham.
Oh my gawwwwwd it’s a giant mcgriddle. Pardon me I can’t stay. It’s too beautiful.
Kind of like a Monte Cristo!
