    This was the perfect late night/weekend meal.



    1 1/2 cup mozzarella

    2T Cream Cheese

    3/4c Almond flour

    1 Egg

    Garlic Salt

    -Made fathead dough as usual and then I flattened it into a big rectangle on a cookie sheet and put it in the fridge for about 20 minutes to harden it up a bit. After that I cut the entire thing into mini triangles to roll the mini sausages in but that ended up being a waste of time because once they cooked you couldn’t tell what shape it was. So don’t do that. Next time I would just refrigerate and then cut the dough into a little over 30 equal strips, then roll the sausages and bake. -Baked at 400 for about 15 minutes.

    2 tbsp butter

    1 cup low carb beer

    2 tsp Dijon mustard

    1/2 tsp paprika, plus additional for garnish

    1/8 tsp ground Cayenne pepper

    1/4 cup heavy whipping cream

    2 oz cream cheese

    2 cups shredded cheddar cheese

    Directions: Combine butter, low carb beer (I used Miller Lite) dijon, paprika, and cayenne. I added extra cayenne because I like it to be spicier. Bring to boil and then let it simmer for 15 minutes. Stir in HWC, cream cheese, and cheddar cheese, then let simmer for 5 more minutes. After this step my sauce was pretty thick so I thinned it a bit with almond milk. You could also use more cream or maybe even water to thin if needed. I also added a few drops of a very hot hot sauce to it. It came out perfect.
