A few weeks ago I put out a request for a porridge recipe – the weather here is cooling off and I wanted a nice cuddly breakfast.
Like a hero, u/Aerys1 hooked me up with a recipe. I’ve just tried it out with a few tweaks to suit myself, and now I’m back to report on a raging success!
Original recipe at the bottom 🙂
– 2 tbsp (16g) coconut flour
– 2 tbsp (14g) flax meal (aka linseed meal)
– 2/3 cup water
– pinch of salt
– 1 egg, whisked
– *to serve*
– 30g cream
– 20g imitation maple syrup (I use Queen brand)
Place first 4 ingredients in a small pan over medium heat. Stir often and allow to come to a simmer. Turn heat down a little and continue to simmer, stirring frequently, until it thickens.
Remove from heat and add egg, a little at a time, stirring furiously to avoid getting scrambled eggs in your porridge.
Return to heat and continue to stir well until thick.
Remove from heat, continue to stir another minute before whacking it in a bowl.
Top with whatever you like. I used cream and fake maple and can highly recommend – it was exactly what I felt like and now I’m sitting here warm and happy with a tummy full of comfort food that really was just as good as the real deal.
