    This was my first time trying Pork Belly and it was awesome! Definitely making more soon. SUPER easy & quick to prepare, but takes 4 hours in the oven, so put it in and do something else for a while. If you have any questions, ask away and I’ll answer them asap 🙂

    Nutritional Values: 750 Calories per serving (65g Fat, 6g Carbs, 34g Protein) (Salad not included).

    Ingredients for 2 servings: Pork Belly (500g), Cauliflower (450g), Butter (60g), Dill (15g) + your own salad.

    1. Start your oven and put it on 125 Celsius.
    2. Put the Pork Belly Meat up and rub it in spices and salt (be generous) both on the top and the sides.
    3. Flip it and put it rind up, score some dashes or squares in the rind with a sharp knife and rub some additional spices in between the cracks. I used a mix of herbs, salt & pepper.
    4. Put it into the ovenware rind up then roast it in the middle of the oven for 4 hours.
    5. When there are about 25 minutes remaining, cook your cauliflower until soft (~5 minutes).
    6. Drain all the water from the pan and add the butter, salt, pepper & dill. Mix it with a hand blender.
    7. Prepare a salad (I used green kale, tomato, and feta cheese for mine).
    8. Cut the meat according to the scores you made previously. Serve… Done!

    As a tip Sous vide pork belly then flash fried is absolutely amazing. The slow cook renders the meat and fat soft, then the high temp frying crisps the outside…..

    Curious if anyone has tried doing pork belly in the instant pot? Im sure a sear on the fat first for some crispness would be in order but I’m curious if this is feasible when 4 hours isn’t an option

    Man you gotta get that skin crispier. Takes it to a whole nother level. Score and salt it and make sure it’s completely dry before you put it in. Wipe the excess salt off after. Voila

    Cauliflower Mash is so great! Admittedly I tried it the first time when I saw a frozen version at the grocery. I tried it on my own a few times but it kept coming out grainy. I know frozen = processed but man is it tasty!!
