    **Ingredients:**

    * 1 lb frozen raw shrimp (easy peel and de-veined)
    * 1 lb cauliflower
    * ½ lb broccoli
    * 150g turkey pepperoni
    * 50g red onions
    * 50g scallions
    * 50g bell peppers
    * 150g shiitake mushrooms
    * 2 tbsp avocado oil
    * 1 tbsp of sesame seeds
    * 2 large eggs
    * 5 tbsp minced garlic
    * 4 tbsp soy sauce
    * 2 tbsp of seasoned rice vinegar
    * ½ tbsp sesame oil
    * 1 tbsp chili powder
    * 2 tbsp ginger
    * 2 tbsp mayo
    * 1 tbsp Sriracha

    **Instructions:**

    Rice 1 lb of cauliflower and ½ lb broccoli and reserve (I did it in a food processor, but I’ve found the prepared bags are just as good). Dice 150g of turkey pepperoni to about the size of the rice and reserve. Place frozen shrimp in a pot of cold water, bring to a boil, then reduce to a simmer for a few minutes until mostly cooked (they’ll finish cooking at the end), fish out the shrimp with a spider strainer, place in cold water, peel and reserve. Finely dice onions, scallions, peppers and mushrooms. Heat 2 tbsp of avocado oil on high heat in a large wok and sauté 1 tbsp of sesame seeds, then the onions, peppers and shrooms until softened. Add eggs and quickly scramble and break apart then 5 tbsp minced garlic, riced broccoli, and riced cauliflower. Add 4 tbsp soy sauce, 2 tbsp of seasoned rice vinegar, ½ tbsp sesame oil, chili powder, freshly grated ginger (I like to peel and freeze mine then grate with a micro-plane). Then add extra salt to taste (I like saltier vegetables than most). Continue cooking on high heat, mixing continuously until the steam slows significantly and the cauliflower tastes cooked to your liking. Re-hydrate with a cup of water (I ladled some of the water I used to cook the shrimp in for extra flavor) add your shrimp and pepperoni and cook for a few more minutes until shrimp is fully cooked and the water has mostly steamed off. To plate I pressed a large serving (1/3 yield) into a square bowl, plate on top, then flipped to make a neat little mound. Then I squirted over 2 tbsp Sriracha-mayo and garnished with some salad leaves.
