    * 2 oz SPAM (about two 1/4 inch slices, diced)

    * 2 cups prepared cauliflower (riced, cooked until soft, let cool, then put in a tea towel or cheese cloth and wring out as much moisture as you can)

    * 1/4 cup napa cabbage kimchi (chopped into 1 inch pieces, if preferred)

    * 1-2 eggs

    * 1-2 tbls soy sauce or tamari

    * 1-2 tsp sesame oil

    * Ground white pepper

    * 3 tsp olive oil

    * 1-2 green onion stems (to garnish)

    1. In a medium nonstick pan, heat up 1 teaspoon of olive oil over med-high heat, add SPAM and sauté until golden brown (2-3 minutes)

    2. Add prepared cauliflower and cook until lightly browned, stirring frequently (2-3 minutes)

    3. Add kimchi and stir to combine

    4. Move everything to one side of the pan and add 1 teaspoon of olive oil to the empty side and let heat up.

    5. Crack an egg into the oil and stir to scramble (1-2 minutes), then stir to combine with the rest of the ingredients

    6. Season with soy sauce, sesame oil, and white pepper to taste

    7. Spoon onto bowl or serving dish

    8. (Optional) add last teaspoon of oil and cook second egg to desired doneness

    9. Top with egg and garnish with green onions

    This is super customizable depending on your own preference. I personally like to add lots of kimchi and cook my egg over easy. I’ve also chopped up Trader Joe’s sous vide pork belly and used that in place of spam.
