    Low carb bread stuffing. Loaded cauliflower mash. Green bean casserole with homemade cream of mushroom soup. Collard greens. Gravy thickened with xantham gum. 4 hours of cooking to make my side dishes for this special day.

    Keto cream of mushroom soup.

    1 tbsp Olive oil (or any oil of choice)
    1/2 large Onion (diced)
    20 oz Mushrooms (sliced)
    6 cloves Garlic (minced)
    2 cup Chicken broth (or vegetable broth for vegetarian)
    1 cup Heavy cream (or coconut cream for paleo/whole 30)
    1 cup Unsweetened almond milk (or coconut milk)
    3/4 tsp Sea salt
    1/4 tsp Black pepper

    In a large pot over medium heat, saute the onions and mushrooms in olive oil for about 10-15 minutes, stirring occasionally, until lightly browned. Add the garlic and saute for another minute.

    Add the chicken broth, cream, almond milk, sea salt, and black pepper. Bring to a boil, then simmer for 15 minutes, stirring occasionally.
    Use an immersion blender to puree until smooth (or puree in batches in a regular blender).

    4 Slices Keto Bread (or rolls), crumbled
    3 tbsp Butter, melted
    2 stalks Celery, chopped
    1/2 tsp Garlic, minced
    1 tsp Italian Blend Seasoning, dried
    1/4 tsp Sage
    1/2 tsp each Salt & Pepper
    Olive Oil
    1/2 tsp Celery Seasoning , optional
    1/2 Cup Chicken broth

    INSTRUCTIONS
    Crumble the keto bread, drizzle with olive oil and bake for about 5 minutes until lightly browned.
    Saute chopped veggies in olive oil for a minute or two to bring out flavors.
    Mix together with melted butter and chicken broth
    Bake on 350 covered with foil for 10 minutes and

    This makes me want to make a thanksgiving meal next week! I cheated and am totally ok with it. It’s my fav holiday but keto is totally doable. I just go to aunts and uncles otherwise I’d try to.
