    • 1 cup warm water
    • 1 tablespoon sugar
    • 14 g yeast (4 teaspoons)
    • 2 eggs room temperature large eggs
    • Pinch salt
    • 2/3 cup golden flax meal
    • 1/2 cup oat fiber
    • 1 1/4 cup vital wheat gluten
    • 70 g butter (5 tablespoons) cubed
    1/4 teaspoon xanthan gum
    Throw everything in a stand mixer and let mix on low til gluten develops (5-10min), With a little oat fiber on the counter, flatten, do a business letter fold, then roll up, place in lid pan, cover and allow to rise in a warm place – roughly 1-2 hrs. Bake at 400F for 40min

    Do you bake the loaf with the lid on? I have an Emile Henry ceramic loaf pan if that will work.

    I’m just trying to find the rest of the ingredients, and then I’m making this!

    Also reporting in: tried this (without the xanthan gum and with wheat bran instead of oat fibre because it’s all I had) and it came out brilliantly! it rose like ‘real’ bread, and slices and toasts really well. I cut mine up into 10 thick slices and have been having one toasted each day for breakfast this week (for 8g carbs a slice). Thanks for posting this recipe, it’s great!
