If you’re a fan of noodles or pasta try healthy noodles. I bought at Costco. All I had to do was rinse the noodles.
Faux Pho recipe:
Heat in sauce pan or microwave 4-6 min
Bone broth (1g carb per cup )
Low Sodium Soy Sauce (to taste)
Splash of Fish sauce
Favor Asian spices
Healthy Noodles (entire package 2g carb net)
Meat of choice:
I used fully cooked smoked pull pork from Costco (0g carbs per serving)
Don’t drink all the broth and you’re definitely below 5g net carbs per serving
No joke it was a five minute prep when you cook in microwave. All I had to do was chop onions.
I was surprised by Kirkland pulled pork being 0 carbs, color me impressed
Pork, water, salt, sodium nitrite, spice extract.

I love that pulled pork! I bought 4 boxes on my last trip to costco. It can easily meal prep my lunch for 1-2 weeks.
I thought I would have to give up Pho, so glad I found this post.
