    I liked the original recipe but wanted to make it more colorful and tangy.
    I did not have lemon extract and I used a bit more lemon zest instead.
    I used Xylitol instead of the sweetener in the original recipe.
    I whipped 6 egg whites instead of 5, and made sure they were completely fluffy to cloud level.
    I used pink Atlantic salt.
    I added to the batter 200g white yogurt 15% fat, and mixed in frozen raspberries.
    I also decorated with same berries on top for color and extra tang and swirled the raspberry juice a bit with a toothpick just for the fun of it.
    This came out great and non ketoers also enjoyed. I’d add more frosting for a thicker layer next and perhaps a tiny bit less sweetener in it.
